A cheesy summer pie layered with ripe tomatoes, fresh basil, and creamy mayo or ricotta. Perfect for potlucks and family gatherings.

Ingredients

  • 1 pre-made pie crust (9-inch)
  • 4 large ripe tomatoes, sliced
  • 1/2 teaspoon salt
  • 1/2 cup fresh basil, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise or ricotta
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place tomato slices on paper towels and sprinkle with salt to draw out moisture.
  3. Blind bake the pie crust for 10 minutes, then let cool.
  4. Layer half the tomatoes in the crust, followed by half the basil and half the cheeses.
  5. Repeat with remaining tomatoes, basil, and cheeses.
  6. Spread mayonnaise or ricotta evenly over the top.
  7. Bake for 30-35 minutes until golden and bubbly.
  8. Let cool for 10 minutes before slicing.

Notes

  • Use heirloom tomatoes for extra flavor.
  • Pat tomatoes dry before layering to prevent a soggy crust.
  • Transport in a pie carrier for potlucks.
