Soft, spiced sugar cookies infused with pumpkin puree, perfect for fall and holiday baking.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter and sugar until light and fluffy.
  3. Mix in the pumpkin puree, egg, and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  6. Roll out the dough on a floured surface and cut into shapes with cookie cutters.
  7. Place cookies on the prepared baking sheets and bake for 10-12 minutes.
  8. Cool on a wire rack before glazing or coating with sugar.

Notes

  • Chill the dough for 30 minutes before rolling for easier handling.
  • Freeze unbaked cookie dough for up to 3 months.
  • For a glossy finish, brush cookies with a simple glaze of powdered sugar and milk.
