Soft, cinnamon-sugar coated cookies inspired by apple cider donuts, with a hint of brown butter.

Ingredients

  • 1 cup apple cider (reduced to 1/4 cup)
  • 1/2 cup unsalted butter (browned)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup cinnamon-sugar mix (for coating)

Instructions

  1. Simmer apple cider until reduced to 1/4 cup. Let cool.
  2. Brown butter in a pan, then cool slightly.
  3. Mix sugars, browned butter, egg, vanilla, and reduced cider.
  4. Whisk flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  5. Combine wet and dry ingredients until just mixed.
  6. Chill dough for 30 minutes.
  7. Preheat oven to 350°F (175°C).
  8. Roll dough into balls, coat in cinnamon-sugar, and place on a baking sheet.
  9. Bake for 10-12 minutes until edges are set.
  10. Cool on a wire rack before serving.

Notes

  • For extra flavor, add a splash of vanilla to the cinnamon-sugar coating.
  • Store in an airtight container to keep cookies soft.
