Make bold Tex-Mex steak fajitas with a zesty lime-chili marinade. Cook them in a cast iron skillet, on a sheet pan, or grill for a quick taco night meal.

Ingredients

  • 1.5 lbs flank steak, sliced thin
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 3 tbsp olive oil
  • 3 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • Fresh cilantro, for garnish

Instructions

  1. Mix olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper in a bowl.
  2. Toss steak slices in the marinade and let sit for 15 minutes.
  3. Heat a cast iron skillet, sheet pan, or grill to medium-high.
  4. Cook steak for 3-4 minutes per side until browned.
  5. Add bell peppers and onions, cooking until tender (5-6 minutes).
  6. Warm tortillas and serve fajitas with fresh cilantro.

Notes

  • For extra flavor, marinate steak for up to 2 hours.
  • Use a mix of red, yellow, and green bell peppers for color.
