These easy pumpkin protein balls taste like pumpkin-spice cookie dough but pack a protein punch. Perfect for a quick snack or meal prep, they’re ready in 10 minutes and can be made vegan or gluten-free.

Ingredients

  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup pumpkin puree
  • 1/4 cup nut butter (almond or peanut)
  • 1/4 cup maple syrup or honey
  • 1 scoop vanilla or unflavored protein powder (plant-based or whey)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a bowl, mix oats, pumpkin puree, nut butter, maple syrup, protein powder, pumpkin pie spice, cinnamon, and salt until well combined.
  2. Fold in chocolate chips if using.
  3. Scoop tablespoon-sized portions and roll into balls.
  4. Place on a tray and refrigerate for 30 minutes to firm up.
  5. Store in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

  • For vegan version, use plant-based protein powder and maple syrup.
  • For nut-free, swap nut butter with sunflower seed butter.
  • Add more oats if the mixture is too sticky.
