Soft sugar cookies with pumpkin pie flavor, perfect for Thanksgiving cookie trays.

Ingredients

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream butter and sugar until smooth.
  3. Add egg, vanilla, and pumpkin puree. Mix well.
  4. In another bowl, whisk flour, pumpkin pie spice, baking soda, and salt.
  5. Gradually mix dry ingredients into wet ingredients.
  6. Scoop dough onto baking sheet, spacing 2 inches apart.
  7. Bake for 10-12 minutes until edges are firm.
  8. Cool on wire rack before frosting.

Notes

  • For cream cheese frosting, mix 4 oz softened cream cheese, 1/4 cup butter, 1 cup powdered sugar, and 1 tsp vanilla.
  • Store in an airtight container for up to 3 days.
