- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/4 tsp salt
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream butter and sugar until smooth.
- Add egg, vanilla, and pumpkin puree. Mix well.
- In another bowl, whisk flour, pumpkin pie spice, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients.
- Scoop dough onto baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes until edges are firm.
- Cool on wire rack before frosting.
Notes
- For cream cheese frosting, mix 4 oz softened cream cheese, 1/4 cup butter, 1 cup powdered sugar, and 1 tsp vanilla.
- Store in an airtight container for up to 3 days.
