Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (dairy or plant-based)
  • 1/4 cup pumpkin purée
  • 1 tbsp maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1 tbsp chia seeds
  • 1 scoop protein powder (optional)
  • Pinch of salt

Instructions

  1. In a jar or bowl, combine oats, milk, pumpkin purée, maple syrup, pumpkin pie spice, cinnamon, chia seeds, protein powder (if using), and salt.
  2. Stir well until fully mixed.
  3. Cover and refrigerate overnight or for at least 4 hours.
  4. Stir before serving. Add toppings like nuts, yogurt, or extra cinnamon if desired.

Notes

  • Use plain pumpkin purée, not pumpkin pie filling.
  • For a creamier texture, add more milk before serving.
