  • 1 bell pepper, chopped (red or green)
  • 1 can (14 ounces) of diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Marinate the beef for at least an hour, preferably overnight.
  2. Heat a large pot or Dutch oven over medium-high heat and add olive oil.
  3. Sear the marinated beef in batches until browned, then remove from the pot.
  4. Sauté the chopped onion and minced garlic until translucent.

  6. Add the seared beef back into the pot along with diced tomatoes, beef broth, and spices.
  7. Bring to a gentle boil, then reduce heat and let it simmer for 1.5 to 2 hours.
