Quick-seared tuna with a sesame crust, served rare inside and paired with ponzu sauce for a light Japanese appetizer or main dish.

Ingredients

  • 1 lb sashimi-grade tuna steak
  • 2 tbsp white sesame seeds
  • 2 tbsp black sesame seeds
  • 1 tbsp neutral oil (like avocado or grapeseed)
  • 1/4 cup ponzu sauce
  • 1 tsp grated ginger
  • 1 green onion, thinly sliced

Instructions

  1. Pat the tuna dry and coat all sides with sesame seeds.
  2. Heat oil in a pan over high heat until shimmering.
  3. Sear the tuna for 30 seconds per side, creating a crust while keeping the center rare.
  4. Remove from heat and let rest for 2 minutes.
  5. Slice thinly against the grain and serve with ponzu sauce, grated ginger, and green onions.
