4 medium green tomatoes
1 cup all-purpose flour
1 cup cornmeal
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 eggs
1/4 cup buttermilk
Vegetable oil for frying
Instructions
Slice tomatoes into 1/4-inch thick rounds.
In a shallow bowl, mix flour, cornmeal, salt, black pepper, paprika, and cayenne pepper.
In another bowl, whisk eggs and buttermilk.
Dip each tomato slice in the egg mixture, then coat with the flour mixture.
Heat oil in a skillet over medium heat.
Fry tomatoes in batches until golden brown, about 2-3 minutes per side.
