A foolproof recipe for glossy, non-sliding caramel apples, ideal for Halloween or fall fairs.

  • 6 medium apples (Granny Smith or Honeycrisp)
  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 6 wooden sticks (or popsicle sticks)
  • Optional toppings: chopped nuts, chocolate drizzle, sprinkles

Instructions

  1. Wash and dry apples thoroughly. Insert sticks into the tops.
  2. In a saucepan, combine sugar, corn syrup, and butter. Cook over medium heat until sugar dissolves.
  3. Stir in heavy cream and vanilla. Bring to a boil, then reduce heat and simmer until caramel reaches 245°F on a candy thermometer.
  4. Dip each apple into the caramel, swirling to coat evenly. Let excess drip off.
  5. Roll in toppings if desired. Place on parchment paper to cool and set.
