Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp pumpkin spice
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans (for streusel)
  • 2 tbsp cold butter (for streusel)

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.
  2. In a large bowl, mix flour, baking soda, salt, and pumpkin spice.
  3. Add pumpkin puree, oil, eggs, and sugars. Stir until combined.
  4. Pour batter into the loaf pan.
  5. Make streusel by mixing pecans and cold butter. Sprinkle over batter.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool before slicing.
