1 bay leaf

1 cup of frozen peas (added in the last 30 minutes of cooking)
1 cup of green beans, trimmed and cut into pieces

Instructions
Brown the beef in a large skillet with olive oil over medium-high heat for about 3-4 minutes on each side.
Sauté the chopped onion and minced garlic in the same skillet for 2-3 minutes until fragrant, then add the sliced carrots and diced potatoes, stirring for another 2 minutes.
Transfer the browned beef and sautéed vegetables to a slow cooker, add beef broth, salt, black pepper, dried thyme, and bay leaf, and stir gently to combine.
Set the slow cooker to low heat and cook for 6-8 hours, adding frozen peas or green beans in the last 30 minutes.
Notes
For a thicker stew, mix a tablespoon of cornstarch with water and add it during the last 30 minutes of cooking.
