- 4 boneless, skinless chicken breasts or thighs
- 2 tbsp butter
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
- Season chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 30 seconds.
- Pour in chicken broth and lemon juice. Simmer for 2-3 minutes until slightly thickened.
- Return chicken to the skillet, spoon sauce over it, and sprinkle with lemon zest and parsley.
- Serve with rice or asparagus.
