A quick and easy Mexican-inspired casserole that combines the flavors of enchiladas with crunchy tortilla chips for a fun twist.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) red enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheddar cheese
  • 4 cups tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Add taco seasoning and stir well.
  4. In a large bowl, mix the cooked beef, black beans, corn, and half the enchilada sauce.
  5. Layer half the tortilla chips in a greased baking dish.
  6. Spread the beef mixture over the chips.
  7. Pour the remaining enchilada sauce over the top.
  8. Sprinkle with shredded cheese.
  9. Bake for 20 minutes or until cheese is bubbly.
  10. Garnish with sour cream, cilantro, and red onion before serving.

Notes

  • Use your favorite tortilla chips for extra crunch.
  • Substitute ground turkey or chicken for a lighter version.
  • Add jalapeños for extra heat.
