- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) red enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 2 cups shredded cheddar cheese
- 4 cups tortilla chips
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- Preheat oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and stir well.
- In a large bowl, mix the cooked beef, black beans, corn, and half the enchilada sauce.
- Layer half the tortilla chips in a greased baking dish.
- Spread the beef mixture over the chips.
- Pour the remaining enchilada sauce over the top.
- Sprinkle with shredded cheese.
- Bake for 20 minutes or until cheese is bubbly.
- Garnish with sour cream, cilantro, and red onion before serving.
