A creamy, spicy baked chicken dish stuffed with jalapeños, bacon, and cream cheese. Perfect for a quick weeknight dinner and keto-friendly.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 4 jalapeños, seeded and diced
  • 4 slices bacon, cooked and crumbled
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. In a bowl, mix cream cheese, cheddar cheese, jalapeños, bacon, garlic powder, salt, and pepper.
  3. Cut a pocket into each chicken breast and stuff with the cream cheese mixture.
  4. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side.
  5. Transfer skillet to the oven and bake for 20-25 minutes, until chicken is cooked through.
  6. Serve hot and enjoy!

Notes

  • For extra spice, leave some jalapeño seeds in the mix.
  • Air fryer variation: Cook at 375°F for 15-18 minutes.
