1 lb boneless, skinless chicken breast, diced
1 cup dried green lentils, rinsed
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
6 cups low-sodium chicken broth
1 tsp olive oil
1 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
2 cups fresh spinach
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5 minutes.
Stir in garlic, thyme, and paprika. Cook for 1 minute.
Add chicken, lentils, and broth. Bring to a boil.
Reduce heat, cover, and simmer for 25 minutes or until lentils are tender.
Stir in spinach and cook until wilted.
Season with salt and pepper.
Notes
Store in airtight containers for up to 5 days.
Freeze for up to 3 months.
Add more broth if soup thickens upon reheating.
