Authentic German Stuffed Cabbage Rolls (Kohlrouladen)

A traditional German comfort food featuring tender cabbage leaves stuffed with a savory filling, simmered in a rich gravy.

Ingredients

  • 1 large head of cabbage
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 4 slices bacon, chopped
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp flour
  • 1 tbsp butter

Instructions

  1. Boil the whole cabbage in salted water for 5 minutes. Remove outer leaves carefully.
  2. Mix ground beef, pork, onion, breadcrumbs, egg, salt, pepper, and paprika in a bowl.
  3. Place a spoonful of filling on each cabbage leaf and roll tightly.
  4. Brown bacon in a pot, then remove. Sear cabbage rolls in the same pot.
  5. Add beef broth and tomato paste. Simmer covered for 45 minutes.
  6. Remove rolls. Thicken the gravy with flour and butter.
  7. Serve hot with mashed potatoes or bread.

Notes

  • Use savoy cabbage for easier rolling.
  • Replace pork with all beef if preferred.
  • Add caraway seeds for extra flavor.
