A quick and flavorful side dish featuring tender roasted patty pan squash with garlic and herbs.

Ingredients

  • 4 patty pan squashes, halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss squash halves with olive oil, garlic, thyme, rosemary, salt, and pepper.
  3. Arrange squash on a baking sheet, cut side down.
  4. Roast for 15-20 minutes until tender and golden.
  5. Serve warm.
