A simple, flavorful tomato soup made with ripe summer tomatoes, fresh basil, and your choice of cream or dairy-free milk.

Ingredients

  • 2 lbs fresh tomatoes, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 cup vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add tomatoes and cook until they break down.
  4. Pour in vegetable broth and simmer for 15 minutes.
  5. Blend the soup until smooth.
  6. Stir in cream or coconut milk and basil.
  7. Season with salt and pepper.

Notes

  • For a roasted version, bake tomatoes and garlic at 400°F for 25 minutes before blending.
  • Use a slow cooker on low for 4 hours if preferred.
