A lighter, no-mayo potato salad inspired by Julia Child, featuring Dijon mustard and fresh herbs for a flavorful side dish.

Ingredients

  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 1 small shallot, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh tarragon, chopped
  • Salt and pepper to taste

Instructions
