  • 4 large onions, thinly sliced (preferably yellow onions)
  • 4 cloves of garlic, minced
  • 4 cups of beef broth

  • 2 tablespoons of tomato paste
  • 2 tablespoons of all-purpose flour
  • 2 tablespoons of olive oil
  • 2 tablespoons of unsalted butter
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Sauté the onions in olive oil and butter until golden brown (20-25 minutes).
  2. Brown the beef cubes in the pot (5-7 minutes).
  3. Deglaze the pot with red wine, scraping up brown bits (5 minutes).
  4. Add beef broth, tomato paste, garlic, thyme, bay leaf, salt, and pepper; stir well.
  5. Bring to a gentle boil, then reduce heat and simmer for 1.5 to 2 hours.
