2 lbs beef chuck, cut into chunks
4 slices bacon, chopped
1 large onion, diced
2 carrots, sliced
3 cloves garlic, minced
8 oz mushrooms, sliced
2 cups red wine
2 cups beef broth
2 tbsp tomato paste
1 tsp thyme
1 bay leaf
Salt and pepper to taste
Instructions
Cook bacon in a large pot until crispy. Remove and set aside.
Brown beef chunks in the bacon fat. Remove and set aside.
Sauté onions, carrots, and garlic until softened.
Add mushrooms and cook until browned.
Return beef and bacon to the pot. Add wine, broth, tomato paste, thyme, and bay leaf.
Simmer on low heat for 2-3 hours until beef is tender.
