Ingredients
Scale
1 pound of shrimp (peeled and deveined)
1 can (10.5 oz) of cream of mushroom soup
1 cup of sour cream
1 cup of shredded cheddar cheese
1 cup of frozen mixed vegetables (like peas and carrots)
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
1 sleeve of Ritz crackers (about 30 crackers)
2 tablespoons of melted butter
1/2 cup of diced bell peppers (optional)
1/2 teaspoon of paprika (optional)
1 tablespoon of fresh parsley (optional)
1/2 cup of cooked rice (optional)
Instructions
Preheat the oven to 350°F (175°C).
Thaw and prepare the shrimp if using frozen.
In a large mixing bowl, combine the cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until well blended, then fold in the shrimp and mixed vegetables.
Pour the shrimp mixture into a greased baking dish, spreading it evenly.
Crush the Ritz crackers and mix with melted butter, then sprinkle over the casserole.
Bake for 25-30 minutes until the top is golden brown and bubbly.
Notes
Use low-sodium cream of mushroom soup for better control over saltiness.
Feel free to customize with your favorite vegetables or spices.
For a spicier version, add diced jalapeños or hot sauce.
Can be made ahead of time and stored in the fridge before baking.
