  • 4 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold butter, cubed

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix rhubarb, granulated sugar, cornstarch, and vanilla. Spread into a baking dish.
  3. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt.
  4. Cut in butter until mixture resembles coarse crumbs.
  5. Sprinkle topping over rhubarb mixture.
  6. Bake for 35-40 minutes until golden and bubbly.
  7. Cool slightly before serving.

Notes

  • Use fresh or frozen rhubarb.
  • Adjust sugar to taste if rhubarb is very tart.
