  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
  2. In a bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla.
  3. Add flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Stir until combined.
  4. Pour batter into the pan and bake for 25-30 minutes. Let cool.
  5. Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over cooled bars.
  6. Cut into squares and serve.

  • Store bars in the fridge for up to 5 days.
