- 4 cups peeled and chopped peaches
- 2 cups granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (optional)
- 1 tablespoon bourbon (optional)
- 1/4 teaspoon chili flakes (optional)
- Sterilize your jars and lids by boiling them for 10 minutes.
- Combine peaches, sugar, and lemon juice in a large pot.
- Cook over medium heat, stirring frequently, until the mixture thickens (about 20-25 minutes).
- Remove from heat and stir in vanilla, bourbon, or chili flakes if using.
- Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
- Process jars in a water bath for 10 minutes.
- Let cool and check seals before storing.
Notes
- Use ripe but firm peaches for best results.
- Adjust sugar to taste if peaches are very sweet.
