- 1 lb ground beef
- 1 packet taco seasoning
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup ranch dressing
- 1/2 cup salsa
- 2 cups Doritos, crushed
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add taco seasoning and water according to packet instructions. Simmer for 5 minutes.
- In a large bowl, combine lettuce, tomatoes, red onion, cheese, black beans, and corn.
- Add the cooked ground beef and toss gently.
- Drizzle with ranch dressing and salsa. Mix well.
- Just before serving, add crushed Doritos and toss lightly.
Notes
- For extra crunch, add Doritos right before eating.
- Swap ground beef with ground turkey for a lighter option.
- Use Greek yogurt instead of ranch dressing for fewer calories.
