A quick Tex-Mex one-dish bake with seasoned beef, cheese, beans, and crunchy Doritos.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 1 bag (9.75 oz) Doritos, crushed
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet, then drain excess fat.
  3. Stir in taco seasoning, black beans, and diced tomatoes. Simmer for 5 minutes.
  4. Layer half the crushed Doritos in a baking dish. Top with the beef mixture and half the cheese.
  5. Add the remaining Doritos and cheese.
  6. Bake for 15 minutes until cheese melts.
  7. Garnish with sour cream and green onions before serving.

Notes

  • For a slow cooker version, layer ingredients and cook on low for 2-3 hours.
  • Make-ahead tip: Assemble the casserole and refrigerate overnight before baking.
  • For a keto meal plan variation, use low-carb tortilla chips instead of Doritos.
