2 cups grated zucchini
1 egg
1/2 cup flour
1/4 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil for frying
Instructions
Grate zucchini and lightly squeeze out excess moisture.
In a bowl, mix zucchini, egg, flour, Parmesan, salt, and pepper.
Heat oil in a skillet over medium heat.
Drop spoonfuls of batter into the skillet and flatten slightly.
Cook for 3-4 minutes per side until golden brown.
Drain on paper towels and serve warm.
Notes
For air fryer version: Spray with oil and cook at 375°F for 10 minutes, flipping halfway.
