A hearty and comforting soup that cooks in one pot, with options for bacon or cheese add-ins and freezer storage.

Ingredients

  • 4 cups peeled and diced potatoes
  • 1 chopped onion
  • 2 minced garlic cloves
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add potatoes and broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Use an immersion blender to partially blend the soup.
  6. Stir in heavy cream and season with salt and pepper.
  7. Top with cheese and bacon before serving.

Notes

  • For a slow cooker version, combine all ingredients except cream, cheese, and bacon. Cook on low for 6-8 hours, then stir in cream before serving.
  • Freeze leftovers in airtight containers for up to 3 months.
