2 cups corn kernels (fresh or frozen)
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1/4 cup diced green chilies
1 tsp taco seasoning
1/4 cup sour cream
1/4 cup mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
Add corn, cheddar cheese, green chilies, taco seasoning, garlic powder, and onion powder. Stir well.
Season with salt and pepper.
Transfer mixture to an oven-safe dish or skillet.
Bake for 20-25 minutes until bubbly and golden.
Serve warm with tortilla chips or bread.
Notes
For extra spice, add jalapeños or hot sauce.
Can be made ahead and refrigerated before baking.
Use a slow cooker on low for 2 hours if preferred.
