Ingredients
Scale
1 pound of breakfast sausage (mild or spicy)
8 ounces of cream cheese (softened)
6 large eggs
1 cup of milk (whole or any kind)
2 cups of shredded cheddar cheese
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
1 package of frozen hash browns (about 30 ounces)
Optional: 1 cup of diced bell peppers
Optional: 1 cup of chopped spinach
Optional: 1/2 cup of diced onions
Optional: 1/2 teaspoon of red pepper flakes
Optional: Fresh herbs like chives or parsley
Instructions
Preheat your oven to 350°F (175°C).
Cook the breakfast sausage in a large skillet over medium heat until browned and fully cooked, about 5-7 minutes.
In a mixing bowl, blend the softened cream cheese until smooth and creamy.
Combine the cooked sausage, cream cheese mixture, eggs, milk, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper in a large bowl. Stir until well combined.
Pour the mixture over the frozen hash browns in a greased 9×13-inch baking dish and spread it out evenly.
Bake for 45-50 minutes, or until the top is golden and the eggs are set.
Notes
Check for doneness by inserting a knife in the center; it should come out clean.
If the top is browning too quickly, cover it loosely with aluminum foil for the last 10-15 minutes of baking.
Let the casserole rest for 10-15 minutes before serving for easier slicing.
