  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced bell peppers
  • 1/4 cup diced spinach

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. Blend eggs, cottage cheese, salt, and pepper until smooth.
  3. Stir in cheddar cheese, bell peppers, and spinach.
  4. Pour mixture into muffin cups, filling each 3/4 full.
