Ingredients
Scale
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup vegetable oil
3 large eggs
2 cups finely grated carrots (about 4 medium carrots)
1 teaspoon vanilla extract
½ cup buttermilk (or milk with a splash of vinegar)
½ cup chopped walnuts or pecans (optional)
½ cup chocolate chips (optional)
1 teaspoon orange zest (optional)
1 cup shredded coconut (optional)
Instructions
Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, salt, and cinnamon.
Peel and finely grate the carrots until you have about 2 cups.
In another bowl, whisk together the vegetable oil, eggs, vanilla extract, and buttermilk.
Pour the wet ingredients into the dry ingredients and gently fold in the grated carrots until just combined.
Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Notes
Use fresh, organic carrots for the best flavor.
Check the cakes a few minutes before the timer goes off to avoid overbaking.
Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack.
