A delicious vegan alternative to tuna salad using mashed chickpeas, vegan mayo, and nori for a seafood flavor. Perfect for sandwiches and meal prep.

Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1/4 cup vegan mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp nori flakes (for seafood flavor)
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • Salt and pepper to taste

Instructions

  1. Mash chickpeas in a bowl with a fork or potato masher.
  2. Add vegan mayo, Dijon mustard, lemon juice, and nori flakes. Mix well.
  3. Stir in celery and red onion.
  4. Season with salt and pepper.
  5. Serve on bread, wraps, or with crackers.

Notes

  • Store in an airtight container for up to 5 days.
