A quick and flavorful weeknight meal featuring garlic-butter chicken and creamy parmesan rice.

  • 1 lb boneless, skinless chicken breasts, sliced
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/4 cup chicken broth
  • 2 tbsp lemon juice
  • 1/4 cup grated parmesan cheese
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/2 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped parsley

Instructions

  1. Cook rice according to package instructions.
  2. Heat butter in a skillet over medium heat. Add chicken and cook until browned.
  3. Add garlic and red pepper flakes, sauté for 1 minute.
  4. Pour in chicken broth and lemon juice, simmer for 3 minutes.
  5. Stir in heavy cream and parmesan cheese until smooth.
  6. Mix the cooked rice into the skillet, coating it with the sauce.
  7. Season with salt and pepper, garnish with parsley.
