  • 1 pound of boneless, skinless chicken breasts, diced
  • 1 box of Rice A Roni (chicken flavor)
  • 2 cups of chicken broth (homemade or store-bought)
  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese
  • 1 can of cream of chicken soup
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 cup of frozen mixed vegetables (optional)
  • 1/2 cup of diced bell peppers (optional)
  • 1/4 cup of sliced green onions (optional)
  • 1 teaspoon of paprika (optional)
  • 1/2 teaspoon of dried thyme or Italian seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt, pepper, garlic powder, and onion powder. Cook until no longer pink, about 5-7 minutes.
  3. Prepare the Rice A Roni according to package instructions.
  4. In a large mixing bowl, combine cooked chicken, prepared Rice A Roni, sour cream, cream of chicken soup, and half of the shredded cheddar cheese. Mix well.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Top with remaining cheddar cheese and bake for 25-30 minutes until bubbly and golden.

Notes

  • Cover the casserole with aluminum foil for the first 15 minutes of baking to prevent the cheese from browning too quickly.
