1 pound of boneless, skinless chicken breasts, diced
1 box of Rice A Roni (chicken flavor)
2 cups of chicken broth (homemade or store-bought)
1 cup of sour cream
1 cup of shredded cheddar cheese
1 can of cream of chicken soup
1 tablespoon of olive oil
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
1 cup of frozen mixed vegetables (optional)
1/2 cup of diced bell peppers (optional)
1/4 cup of sliced green onions (optional)
1 teaspoon of paprika (optional)
1/2 teaspoon of dried thyme or Italian seasoning (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt, pepper, garlic powder, and onion powder. Cook until no longer pink, about 5-7 minutes.
Prepare the Rice A Roni according to package instructions.
In a large mixing bowl, combine cooked chicken, prepared Rice A Roni, sour cream, cream of chicken soup, and half of the shredded cheddar cheese. Mix well.
Transfer the mixture to a greased 9×13-inch baking dish. Top with remaining cheddar cheese and bake for 25-30 minutes until bubbly and golden.
Notes
Cover the casserole with aluminum foil for the first 15 minutes of baking to prevent the cheese from browning too quickly.
Let the casserole cool for a few minutes before serving to help it set.
