Ingredients
Scale
1 pound of boneless, skinless chicken breasts, diced
1 box of Rice-A-Roni (chicken flavor)
2 cups of chicken broth (homemade or store-bought)
1 cup of sour cream
1 cup of shredded cheddar cheese
1 can of cream of chicken soup
1 tablespoon of olive oil
1 teaspoon of garlic powder
1 teaspoon of onion powder
Salt and pepper to taste
Optional: 1 cup of frozen mixed vegetables (peas, carrots, corn)
Optional: 1 small onion, diced
Optional: 1 bell pepper, diced
Optional: 1 teaspoon of paprika
Optional: Fresh herbs like parsley or thyme for garnish
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, garlic powder, and onion powder, and cook until no longer pink (about 5-7 minutes).
Prepare the Rice-A-Roni according to the package instructions, using chicken broth instead of water.
In a large mixing bowl, combine cooked chicken, prepared Rice-A-Roni, sour cream, cream of chicken soup, and half of the shredded cheddar cheese. Mix well.
Transfer the mixture to a greased 9×13-inch baking dish, spread evenly, and top with remaining cheddar cheese. Bake for 25-30 minutes until cheese is bubbly and golden brown.
Notes
Use organic or free-range chicken for better flavor.
Low-sodium chicken broth can help control saltiness.
Let the casserole rest for 5-10 minutes after baking for easier serving.
