  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese

  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Optional: 1 cup of frozen mixed vegetables (peas, carrots, corn)

  • Optional: 1 bell pepper, diced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt, pepper, garlic powder, and onion powder, and cook until no longer pink (about 5-7 minutes).
  3. Prepare the Rice-A-Roni according to the package instructions, using chicken broth instead of water.
  4. In a large mixing bowl, combine cooked chicken, prepared Rice-A-Roni, sour cream, cream of chicken soup, and half of the shredded cheddar cheese. Mix well.
  5. Transfer the mixture to a greased 9×13-inch baking dish, spread evenly, and top with remaining cheddar cheese. Bake for 25-30 minutes until cheese is bubbly and golden brown.
