A delicious and easy-to-make dish combining the flavors of tacos with cheesy potatoes. Perfect for a quick weeknight dinner or a fun weekend meal.

  • 4 large potatoes, diced
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden brown, about 10 minutes.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes.
  5. Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
  6. Bake for 15 minutes or until cheese is melted and bubbly.
  7. Remove from oven and top with sour cream, green onions, tomatoes, and black olives.
  8. Serve hot and enjoy!
