Ingredients
Scale
8 large eggs
2 cups milk (whole or 2% for creaminess)
1 can (10.5 oz) cream of mushroom soup
4 cups cubed bread (day-old bread works best)
2 cups shredded cheese (cheddar or a blend of your favorites)
1 cup cooked and crumbled sausage or bacon (optional, but highly recommended)
1 cup diced bell peppers (any color for a pop of color)
1 cup diced onions
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together the eggs, milk, and cream of mushroom soup.
In a greased baking dish, layer the cubed bread, followed by the cooked sausage or bacon, diced vegetables, and cheese. Pour the egg mixture over the top.
Bake for about 45-55 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
Let it rest for about 10 minutes before serving.
Notes
Feel free to customize with your favorite vegetables and proteins.
Letting the casserole rest after baking helps the flavors meld.
Can be made ahead of time and stored in the refrigerator or freezer.
