- 1 cup fresh blueberries
- 1/2 cup sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 1 egg (for egg wash)
- 1 tbsp turbinado sugar (for topping)
- Preheat oven to 375°F (190°C).
- In a bowl, mix blueberries, sugar, lemon juice, and vanilla. Set aside.
- In another bowl, combine flour and salt. Cut in butter until crumbly.
- Add ice water, 1 tbsp at a time, until dough forms.
- Roll dough into small balls and flatten into discs.
- Spoon blueberry mixture onto each disc and fold edges to seal.
- Place on a baking sheet, brush with egg wash, and sprinkle with turbinado sugar.
- Bake for 20-25 minutes until golden brown.
- Let cool before serving.
Notes
- Use frozen blueberries if fresh aren’t available.
- Chill dough for 30 minutes for easier handling.
- Store leftovers in an airtight container for up to 3 days.
