1 pound ground turkey
1 medium head of green cabbage, chopped
1 cup cooked rice (white or brown, your choice)
1 can (15 oz) diced tomatoes, undrained
1 cup shredded cheese (cheddar or mozzarella work beautifully)
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Preheat your oven to 350°F (175°C).
Chop the cabbage into bite-sized pieces.
In a large skillet, heat olive oil over medium heat, add diced onion and minced garlic, and sauté until fragrant.
Cook the ground turkey in the skillet, breaking it up as it cooks, and season with salt, pepper, oregano, and paprika.
In a large bowl, combine the cooked turkey, chopped cabbage, cooked rice, and diced tomatoes.
In a greased baking dish, layer half of the turkey and cabbage mixture, then sprinkle half of the shredded cheese on top. Repeat the layers.
Cover the casserole with aluminum foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
