- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides, about 5 minutes.
- Add onion, carrots, and celery. Cook until vegetables soften, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in beef broth and diced tomatoes. Bring to a boil.
- Reduce heat to low, add green beans, thyme, and rosemary.
- Simmer for 45 minutes until beef is tender.
- Season with salt and pepper before serving.
Notes
- For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup.
- Freeze leftovers in airtight containers for up to 3 months.
- Substitute any vegetables you prefer.
