Hearty Beef Vegetable Soup

A comforting and nutritious beef vegetable soup packed with flavor and wholesome ingredients.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, about 5 minutes.
  3. Add onion, carrots, and celery. Cook until vegetables soften, about 5 minutes.
  4. Stir in garlic and cook for 1 minute.
  5. Pour in beef broth and diced tomatoes. Bring to a boil.
  6. Reduce heat to low, add green beans, thyme, and rosemary.
  7. Simmer for 45 minutes until beef is tender.
  8. Season with salt and pepper before serving.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup.
  • Freeze leftovers in airtight containers for up to 3 months.
  • Substitute any vegetables you prefer.
