A creamy and comforting slow cooker beef stroganoff made with ground beef for a quick and delicious meal.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup sour cream
  • 8 oz egg noodles, cooked
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add the onion, garlic, and mushrooms. Cook until softened.
  3. Transfer the mixture to a crockpot.
  4. Stir in cream of mushroom soup, beef broth, Worcestershire sauce, Dijon mustard, salt, and pepper.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours.
  6. Before serving, stir in sour cream.
  7. Serve over cooked egg noodles and garnish with fresh parsley.

Notes

  • For extra creaminess, add more sour cream.
  • Substitute ground turkey for a lighter version.
  • Freeze leftovers for up to 3 months.
