A warm Bavarian-style potato salad with bacon and vinegar, perfect for Oktoberfest or any gathering.

Ingredients

  • 2 lbs waxy potatoes (like Yukon Gold)
  • 6 slices thick-cut bacon, diced
  • 1 small onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Boil potatoes until tender, then peel and slice.
  2. Cook bacon until crispy, then remove and set aside.
  3. Sauté onion in bacon fat until soft.
  4. Add vinegar, broth, mustard, and sugar to the pan. Simmer briefly.
  5. Toss potatoes and bacon in the warm dressing.
  6. Season with salt, pepper, and parsley.
  7. Serve warm.

Notes

  • Best served warm, not hot.
  • Add a splash of broth if too dry.
  • For extra tang, use more vinegar.
