A creamy cheesecake with cinnamon-apple filling and oat-crisp topping, perfect for Thanksgiving or fall desserts.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat oven to 325°F. Mix graham cracker crumbs and melted butter, then press into a springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
  3. Toss apples with cinnamon and spoon over cheesecake batter.
  4. Combine brown sugar, oats, flour, and cold butter into a crumble. Sprinkle over apples.
  5. Bake for 50-60 minutes until set. Cool, then chill for 4 hours.
